Mini Corn Dog Muffins
Yield: approximately 36 muffins
1 box corn muffin mix
nonstick cooking spray
1 package hot dogs, cut into 1-inch bites
Heat oven to 375 F.
Prepare muffin mix according to package instructions.
Spray mini muffin tin with nonstick cooking spray and spoon 1 tablespoon batter into each cup.
Place one hot dog bite in middle of each muffin cup.
Bake 8-12 minutes, or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving.
